Carousel Presents
The second Observer Rising Star of 2015 to join the Carousel constellation this year, Ukrainian-born Olia Hercules is just a few weeks away from super stardom.
Her stunning debut cookbook, ‘Mamushka’ – a celebration of the rich culinary heritage of Ukraine, Uzbekistan, Armenia and beyond – lands on bookshelves at the end of this month, and to mark the occasion, she’s bringing her cornucopia of hitherto underrepresented flavours to Marylebone…
For one whirlwind week, the former Ottolenghi chef will be introducing us to the joys of ‘The Wild East’, recreating those magical summer evenings as a child in Kakhovka when she would join her extended family around the rickety kitchen table, tucking into bountiful sharing dishes cooked by her grandmothers and tearing off hunks of home-baked hop blossom sourdough to soak up the juices.
Accompanied by a soundtrack of Ukrainian-gypsy-punk-rock and Moldovan ska, Olia’s menu will feature a sharing main of Georgian Poussin Tabaka accompanied by a polychrome line-up of sides including Caucasian Grilled Vegetable Caviar; Soviet-Korea Pickled Carrots; and Uzbeki Daikon, Onion, Herb and Pomegranate Salad.
Olia wants everyone to know that Eastern European food can be “authentic but at the same time modern, fun, crazy and suitable for young and old” – come join the party…
